Salads
2/3 cups olive oil
1/4 cup wine vinegar
1 teaspoon tarragon
2 tablespoons bacon drippings
2 cloves garlic crushed
1 teaspoon salt
1/4 teaspoon pepper
1/2 lb. bacon
(optional: 2 oz toasted slivered almonds)
2 10-oz bags of spinach
Wash and dry spinach.
Broil bacon well done, drain and roll between paper.
Blend all other ingredients of dressing.
Pour dressing over spinach.
Sprinkle bits of bacon over spinach just before serving.
